Chef's Profile

Meet Padma Mohan: The Dairy-Free Baker

As a certified pastry chef, Padma’s journey into lactose-free baking is both personal and inspiring. Growing up in a South Indian household unaware of lactose intolerance, she often felt excluded from enjoying the desserts everyone else loved. Determined to overcome these challenges, Padma mastered the art of dairy-free baking, combining her scientific knowledge and creativity to craft treats that don’t compromise on flavor or texture.

Despite the hurdles of working in a dairy-rich industry, Padma embraced the challenge, experimenting with alternatives like almond milk, coconut milk, and vegan butter to recreate classic recipes. Her passion stems from a deep desire to make desserts accessible and inclusive for everyone, especially those with dietary restrictions. Today, she not only curates delicious recipes but also shares her expertise through workshops and community engagement.

Understanding Lactose Intolerance

Lactose intolerance occurs when the body has insufficient levels of lactase, the enzyme responsible for breaking down lactose (the sugar found in milk) into simpler sugars. Without enough lactase, lactose cannot be properly digested, leading to digestive discomfort.
